Szechuan peppercorns for cooking Flavor profile: Fruitier and slightly milder than black pepper, it has a slight mouth tingle feel that enhances its taste and makes it perfect for hotpots and stews. It is also great as dry rub in roast meats, and for making Five Spice and Szechuan chilli oil. It is a must-have for authentic Chinese cooking! Storage: Store in a cool, dark place. Keep away from heat and direct sunlight. Shelf-life: When stored properly, spices can be kept for months to years. They only lose their potency over time but can still be used if found to be intact. They are best used until 1.5-2 years from when you get them from the store, or as long as they still smell potent. An indicator of good quality pepper is in its weight. They should feel heavy and dense. Szechuan pepper are unripe pepper corns and the brigher red they are, the better its quality (usually). A better indication of their quality is their smell- they should immediate smell flowery and perfumey compared to black pepper, although they share similar notes.
