Shelf-life: When stored properly, spices can be kept for months to years. They only lose their potency over time but can still be used if found to be intact. They are best used until 1.5-2 years from when you get them from the store, or as long as they still smell potent. An indicator of good quality pepper is in its weight. They should feel heavy and dense. Majority (>90%) of the corns should sink in water. When cracked, better quality peppers are actually dense and white at the center. They should not be hollow. When ground to a powder, lighter colored peppers are favored (from their white center), but over time, they always tend to lose their dark black color.
