The Bureau of Fisheries and Aquatic Resources (BFAR) has declared these culture grounds to be safe from red tide and is being regularly monitored. Bacteria such as the Clostridum Botulinum can survive subpar cooking methods. The minimum cooking standard issued by the US FDA for high risk food products such as bottled seafood is at 116 degree celsius for 3 straight minutes at 10 psi without fluctuation in heat temperature. Gourmet PH exceeds the standard by cooking our bottled mussels at 116 degree celsius for an entire 5 MINUTES under the supervision of a highly trained and certified chef. This makes our product very safe for public consumption. By making use of commercial food grade glass bottles and careful thermal cooking our products can reach up to more than a year of freshness without chemical preservatives.
