Filipino society is basically matriarchal. The oldest woman in a clan-the matriarch-is loved, honored and, almost unhesitatingly obeyed. She holds sway over most affairs of the clan. At family get-togethers, she invariably takes center stage. On Sundays, when many clans get together for a meal, she indulges all by preparing their favorite dishes-those timeless recipes handed down by the mothers to their sons and daughters.
This book is a compilation of such recipes.
Family and dear friends have generously shared a wealth of culinary gems which have little variations featured here, those extra touches and twists, that make this book different.
Collecting this wealth of materials was not easy. Many recipes were described verbally. Some older ones made us of measures and proportions that are no longer known. We had to test each recipe to make sure that the original flavors were preserved, even after proportions were adjusted and procedures simplified to suit today’s cook.
In spite of everything, we thoroughly enjoyed researching and writing this book. We know that many of you will enjoy using it, over and over, for years to come.
