Japan Kanesu Maiko Somen, Udon or Soba Noodles 300g Somen: Made of wheat flour which are very thin (about 1 mm in diameter) The dough is stretched with the help of vegetable oil to make very thin strips before it is air dried (which is why you need to rinse ramen/soumen noodles after boiling) Soba: Soba noodles are made from buckwheat flour and wheat flour and have a slightly nutty, earthy taste. Soba is the Japanese name for buckwheat, with buckwheat noodles being higher in protein and fiber than many other noodles.
